Lithium may now be too crowded to get into production before all the others out there.
Zinc I like as you mention, given medium term supply constraints and Gold given the prices and its counter-cyclical nature.
A Cobolt, Manganese, Vanadium resource would be good, or as a byproduct from something like Nickle.
The Nickle or Zinc would have to be a low cost long life operation of course.
