    Specifically your saliva coats green leafy veges with an enzyme your body can't manufacture. There is a lot of nitrate in your lettice and these enzymes convert it into nitritous oxide NO.  I have spoken before of the NO-ONO cycle researched by Prof Martin Pell. Anyway this process aids controlling BP. By reducing free radicals it is good for you in many ways including reducing clogging of arteries.
