The IR infers the water content.
If you focus on the pre-expansion harvest ponds, which would otherwise appear white without the IR, you can see the progression of harvesting throughout the year.
Also, interesting how the 1st new evaporation pond was only partially filled in late October.  It was then either drawn out, or allowed to evaporated off, and only filled in earnest recently.
