wow, thats the first time I've ever heard of them being eaten. I suppose the legs would be fine, as you say they're well away from glands. Could be an export opportunity ? They'd be so easy to farm, and if they were suddenly worth something it would certainly help in controlling them.
We have been so brainwashed in what we should eat in this country, which usually results in unnecessary waste. Should be more like the Japanese and Asia in general, where there's not a lot that doesn't end up on the menu. Imagine if possums were as plentiful in Asia as they are here, considering what they feed on i reckon they'd be very edible.
