sydney6791, and that is why boat builders do not use Chinese made stainless steel fittings, they are absolute crap, they only use the lowest of the low grade stainless with next to no nickel. When China starts making high tech large yacht fittings then maybe someone will take some notice. Until then buy your cheap Chinese s.s. BBQ or dishwasher and then replace it in a few years because their stainless steel rusts. I suggest you talk with the likes of Minara's CEO Mr Peter Johnston and see what he thinks of your clever broker friend, who suggests that you can replace nickel with Mn and Nitrogen. HA hA HA ha
