Homogenizing extend the life of the milk, removes flavour and reduces the goodness of the milk.
One can buy unhomogenised milk if one knows where to look. I have bought some in the past from Schulz Organic. Their cream is fabulous but expensive. I don't care. Tried making a custard with this milk plus a bit of their cream in the slow cooker and you get luxury plus. Just add eggs, real vanilla and some castor sugar..... yummy.
