the only reason they don"t eat tripe is because they know where it comes from, so it becomes unfashionable.
it should be classed as a delicacy by restauranteurs .
in my younger days, that was one of my favorites with the white sauce.

these days it is not that readily available at butchers, which is a shame.

ps- a lot of people are turned off because they think it needs copious amounts of cooking.

i just use a pressure cooker-it saves hugely on time and electricity.
