    The funny thing about Jersey cows is they are prolific in the organic dairy sector due to their creamier milk production and then some go on to produce consumer unhomogenised milk (i.e. basically the cream in the milk floats to the top). Quirky as it may seem but larger commodity style processors remove the cream for other purposes or products and then either produce "lean" milk (i.e. no or low fat milks) or reconstitute the milk with cream for full cream milk, again, and it is homogenised so to give a consistency of milk flavour throughout rather than having the cream float to the top.

    Jersey cows are good for producing milk that can be used in higher value products like creams, cheeses, yoghurts etc. due to the kg/ms weightings but as a volume producer of milk they produce less "volume" than Fresians or Holsteins.

    A2A2 gene bulls and cows is a whole different conversation for another cuppa on another fine morning in the future.
