A quick lesson in the US meat trade.95% of Americas beef is grainfed , the trim or offcuts are quite fatty & they need lean red beef with low fat levels to blend with that fatty trim to produce ground burger beef. Australia is one of the few exporting countries that can supply that type of lean trim from our grassed production . Most of this comes from cull cows , bulls, & the trim from grassed steers & heifers killed at a USDA licenced plant . Hope this helps you as you need all the help you can get.
