I forgot to add something to my earlier post, the following is taken from the website "babyformulaexpert.com".
"There are 2 main types of cow's milk protein that will end up in a cow's milk-based formula. These are whey proteins and casein proteins. Whey and casein are not actually two single proteins. They each represent a group of different types of proteins (or chains of amino acids linked together). What distinguishes the two classes of proteins are how they behave when exposed to acid (like stomach acid). Whey proteins are those that remain in liquid form when milk coagulates (curdles). This is the portion that is discarded when making cheese. Because whey proteins remain "liquid" in the stomach, they empty the stomach into the intestines faster than the casein proteins (Meyer, 2015). Whey proteins are also less likely to be the trigger for an allergy."
The article then goes on to discuss these proteins further. Interesting thing here is that whey protein is the part that is discarded when making cheese. Whey protein is used in making infant formula. Hmmmm, I wonder what they currently do with their whey protein? I am sure we all see the new product opportunity here. If they were looking to go down this track, it would obviously depend on volume of cheese produced and ramping up facilities to deal with that "discarded whey". Something that would take time no doubt. So let's all go buy the cheese so they have heaps of whey that they have to deal with.
