Simply put, the logistics /transportation /processing costs must be that much greater, with a dedicated, unique tanker (for provenance purposes, etc) just for the "free range", another, for the "Jersey", another, for "cream top" and another, for "anything else goes", among others. So too, the cleaning, flushing and rerunning of the processing line with each separate batch going through (presumably, daily).
