It would be very difficult for neighbors to prove you are spying on them as they can see you, standing in the kitchen, just as easily. They're not taking any steps to protect their privacy and you're not taking a deliberate action to stay concealed from them. Like peeking through blinds with lights off, using binoculars, inhabiting odd place like roof, tree, climbing over the fence or using spying equipment.
