Having a rooster doesn`t make any difference to their laying pattern at all other than when they are broody. They will have periods of time where they lay less eggs than the usual 1 per day! Extreme cold or hot weather slows them down. Feeding them bran and pollard sometimes during the coldest periods helps warm them up a bit although can be expensive! Grow some spinach for them to improve the quality of the eggs and because they love some greens.
