GST registration is very straight forward to do later, so long as its done before they pass the GST threshold. I setup my business the same way many years ago when I had more important tasks to do first and the idea of lodging my first BAS statement seemed daunting. Still I understand where you're coming from, another unchecked box. Slowly slowly it's taking shape.
