I used to frequently visit Margaret River area and Colonial Brewery was just down the road.
As per news story posted the other day here, it is an extraordinary success. So too the new brewpub at the edge of town there - Brewhouse.
Breweries are popping up. all over the place down there.
In Albany Wilson’s is mobbed .
In Freo there are two, and I saw at least 20 microbreweries listed in Melbourne on Google ...and there is the Sparkkle one due to open soon in Adelaide that I posted about on another thread.

Obviously it’s on trend and big dollars are involved .
If Gage can choose the right location and then create an iconic personality around the venue they should do well out of it ....but as you said the management needs to be really clear.
...People are fickle too.
The reason hospitality has that hard reputation is because it is hard .
It will be interesting to see where Gage places itself and if it can somehow make itself bombproof.
Maybe a tourist town?
