As you say the ingress of the water into the sample material is a function of the air pressure of the drill rig. It doesn't tell you where the water table sits.
The supergene zones above these styles of deposits are complex and probably unique between deposits and depended on the weathering history of the area, host rocks to the mineralisation, deformation history, alteration etc etc.
I found a paper that gives a nice description of the supergene transition going from the primary ore, through the supergene, oxide zone and to the gossan material at the Elura Zn-Pb-Ag deposit which is about 55km north north-west of Cobar. Link below.

These ore bodies express themselves (weather into) iron oxide minerals (hematite and goethite) within the oxide zone and in the case of Elura there was a small patch of iron oxide rich gossan float material sitting on the surface.
The supergene sulphide zone at Elura was about 3m thick. You can read about it and the minerals that occur in the transition zones above and below supergene in the extract I've cut from the paper below. The supergene/oxide transition zone is marked at Elura by a thin (150mm) band of blue-black sooty chalcocite .
They say that grey fresh rock is encountered at Elura at about 60m but generally the base of weathering of the siltstone host rock is at about 80-120m. The ore at the base of oxidation starts at 80m but oxidised ore has been found in cavities down to 800m. The main lode extends to 900m and the whole deposits consists of 6 steep pipe like accumulations of sulphides over a strike length of 650. Pre-mining resource according to the paper were 45Mt at 8.5% Zn, 5.3% Pb and 69ppm Ag. You can read it all at the link above.
As far as copper below/associated with South Nights. The presentation today is talking about the potential for a major Zn-rich system (no mention of copper) and assays aren't showing Cu to significant levels. You'd need to ask Rob about the potential for copper.
I did notice from the announcement yesterday that WTRC052 designed to scissor towards, and test updip of WTRC035 only intersected a broad zone of anomalous Zn-Pb-As-Ag from ~100m to end of hole and a weak zone of Zn-Pb-Ag mineralisation was intersected between ~168m to ~183m down hole. Assays remain pending. Esh
