I'd like to know how the calculation is done cause when you send bitcoin you spend all the bitcoins in the utxo even though you just want to send a tiny part of it.

It sounds like you're referring to on-block transaction volume, not off-block trading volume. Transaction volume (value of STXOs) occurs on blocks using bitcoin's decentralized network. Trading volume occurs off blocks using centralized exchange platforms.

Derivs, and by that I mean mostly @BitMEXdotcom (shout out to @BitMEXResearch), certainly account for a meaningful percentage of total volumes. Although generally account for less than 30% of total volume, with the rest being spot volume.We see further growth ahead, however.
