Look up the Gilbert Equation for chokes (one method used) e.g. at
http://infohost.nmt.edu/~petro/faculty/Kelly/424/Chokes.pdf
Remember your fluid flow physics - flow rates will depend upon:
- pressure
- choke size
- fluid viscosity (which will have some relationship to temperature) and is related to oil type
- Gas-Liquids ratio

Also note that a key purpose of the choke is to reduce the pressure at the surface.
